Callington Mill’s El Sol is a rich Tasmanian single malt matured entirely in first-fill Sherry casks from Jerez, including Oloroso, PX, Amontillado, Palo Cortado, Fino and Moscatel. Toasted grain, caramel and nuts lead into ripe orchard fruit, jammy berries and gentle spice, with a long, warming finish. Full-flavoured, oily and beautifully balanced, it’s a seriously satisfying take on sherry-matured whisky.

Nose: 
Sweet orange peel and blossom, almonds, dried fruit and plum, with vanilla, spice and toasted oak.

Palate: 
Chocolate, honeycomb and vanilla, layered with stone fruit, cola and warming spice. Rich, viscous and properly sherried.

Finish: 
Long and balanced, with sweet coffee and plum lingering after the fruit and spice fade.
