Cape Byron’s first-ever special release over 50% ABV marks a bold and exciting milestone for the distillery— crafted exclusively for The Whisky List. This release shows off both technical finesse and creative flair: a foundation of unpeated whisky matured in bourbon casks and finished in Chardonnay barrels is elevated by the addition of a peated bourbon-cask-matured component, lending depth and earthiness. A true gateway peat, for those who think they don't like peated whisky.

Nose:
Peat smoke rises first, but it’s gently wrapped in fresh citrus zest, crisp green apple, and vanilla oak spice—an inviting contrast of smoke and fruit.

Palate:
Medium-bodied and vibrant. The sweet, tropical influence of the Chardonnay finish shines through. Lemon curd, pineapple, soft vanilla, and bright fruit sweetness. Peat is ever-present, but it's soft and balanced—more earthen than ashy, rounding out the fruitiness beautifully.

Finish:
Long and warming. Smoky citrus lingers with hints of toasted oak and Chardonnay acidity.
