Billy Walker has never been afraid to experiment with casks, and this nine-year-old GlenAllachie is a good example of why. Part of the distillery's second batch of Wood Finishes, it begins in American oak before moving into Kentucky rye whiskey barrels with varying levels of toast and char. The result is a rather interesting meeting of Speyside sweetness and American whiskey influence, bringing plenty of honeyed fruit, toffee and a lively kick of spice without losing GlenAllachie's character.

Nose:
Honey, ripe apricots, orange peel and lemon cheesecake with toasted almonds, vanilla and a touch of butterscotch.

Palate:
Rich toffee and honeyed malt with citrus, ginger, black pepper and cardamom. Creamy sweetness balanced by warming rye spice.

Finish:
Medium length with lingering honey, peppery spice, orange zest and gentle toasted oak.
