Killara Distillery, founded by Kristy Lark-Booth in Tasmania’s Coal River Valley, is part of a family whisky tradition that stretches back to the founding of Lark Distillery. Its Dark Mofo releases have become a highlight, and KD97 has a particularly good story. The whisky began life in an Australian rum cask before swapping places with last year’s Dark Mofo release and finishing in its PX cask. The result is rich with dried fruit, sultanas and vanilla, with rum-driven spice adding another layer. A little unusual, very Tasmanian, and thoroughly moreish.

Nose:
Dried fruits, sultanas and vanilla, with rich sherry sweetness and a hint of rum spice.

Palate:
Syrupy and smooth, with dark fruit and PX richness giving way to warming spice and deeper complexity.

Finish:
Sweet, lingering and gently spiced, with the dried-fruit character hanging around long after the glass is empty.
