Roam Distillery is doing something genuinely interesting in the WA Wheatbelt, producing whisky on its certified organic and biodynamic farm with a strong focus on provenance, patience and small-batch production. Their approach is deliberately restrained, allowing the spirit and cask to do the talking, and this Rum Cask brings a distinctly tropical dimension to the young whisky. The result is rich and approachable, with caramel and vanilla sitting alongside ripe tropical fruit and gentle oak spice.

Nose:
Caramelised brown sugar, vanilla bean and toasted oak with ripe banana, pineapple and honey.

Palate:
Butterscotch and vanilla with banana, mango and grilled pineapple, followed by soft oak and cinnamon spice.

Finish:
Long and warming with caramel, toasted coconut and brown sugar, fading into dried fruit and gentle spice.
