Tasting Notes
Patience is a virtue, and the Rolling Cask embodies this with their "Stronger & Harder 2.0" release. Founded in Sydney in 2020, Rolling Cask is an Australian independent bottler known for sourcing exceptional casks from Scotland and Japan, often utilizing unique oak treatments like Mizunara and Sauternes casks. This particular expression hails from the shuttered Port Dundas distillery, distilled in 2006 and matured for 16 years in a first-fill Oloroso hogshead before being bottled in 2022. With only 388 bottles produced, it offers a rare glimpse into the rich tapestry of Lowland single grain whisky.
Nose:
Tangy green apple sweets with a backdrop of toasted brown sugar warmth.
Palate:
Apricot pastries and gingerbread icing intertwine with orchard fruits and festive spices.
Finish:
A chocolatey conclusion accented by a hint of charred oak.
