The Whisky Cellar is an Edinburgh-based independent Scotch whisky bottler, selecting casks from its private stock at the peak of their character. The company searches far and wide for casks showing exceptional complexity of flavor and length on the palate. “Unconstrained by age or statement of vintage, regionality or cask type…if our tasting panel love the whisky enough, we will bottle it.” - Keith Bonnington, Founder. The "House Malt" 2012 is expertly vatted before filling into a single first-fill Oloroso Sherry Butt. Bottled at high strength with no chill filtration. Only 729 bottles produced from the cask.
Nose:
Arabica coffee, malt loaf, toasted spiced nuts, charred oak, rum and raisin ice cream.
Palate:
Full-bodied, rich, and complex with layers of coffee, malt loaf, toasted spiced nuts, and charred oak.
Finish:
Long and satisfying, with lingering notes of rum and raisin ice cream and a touch of spice.
